Ratios are coffee to water by weight. A scale makes this easy and repeatable; tablespoons are approximate because grounds vary in density (about 5 g per level tablespoon).
How to brew it
- Grind: medium-fine.
- Water temperature: 200°F (93°C), with 40% of the water as ice.
- Brew time: 2½–3 minutes.
- Split the water: about 142 ml hot water and 95 g of ice in the carafe.
- Put about 40% of the total water in the carafe as ice, brew with the rest as hot water, and the coffee chills instantly as it drips.
